Raspberry Cordial Ice Cream - Alison's Wonderland Recipes (2024)

This month’s dessert is actually two Anne of Green Gables recipes rolled into one! I wanted to create a tribute to Anne’s “genius for getting into trouble,” and two of her greatest scrapes revolve around ice cream and raspberry cordial.

Desperate for her first taste of ice cream, Anne confesses to losing a brooch (even though she didn’t do it) and accepts punishment, hoping she will still be allowed to attend the church picnic, where the ice cream is being served. And while playing hostess for her best friend Diana, she serves a copious amount of what she thinks is raspberry cordial…but it’s really currant wine! Luckily, in both cases, everything turns out all right in the end. This fresh, bright dessert is great for those of us like Anne, who sometimes need a sweet reminder that “tomorrow is a new day with no mistakes in it…yet!” 😉

P.S. If you don’t have an ice cream maker, you can buy the same Cuisinart model I used here (the vanilla base recipe comes with the ice cream maker).

INGREDIENTS:

  • 1 cup 2% milk
  • 3/4 cup granulated sugar
  • a pinch of salt
  • 2 cups whipping cream
  • 1 tbsp vanilla extract
  • I got the idea for raspberry cordial jam from this recipe. To make the jam, you’ll need: 1 lb fresh raspberries, 3/4 cup honey, 3 tbsp raspberry liqueur, 1 tbsp water, 1/4 tsp cinnamon, a dash of lemon juice.

INSTRUCTIONS:

  1. NOTE: This recipe is super easy, but it requires a little patience. There is a LOT of waiting involved, so I recommend making it a few days before you need it…or on a lazy summer weekend with a few kindred spirits!
  2. In a large bowl, whisk together the milk, sugar, and salt until the sugar has completely dissolved.

  3. Add the cream and vanilla, stirring until completely incorporated.
  4. Cover the bowl with plastic wrap and pop it in the fridge for an hour and half.
  5. In the mean time, combine all the jam ingredients in a medium sauce pan. Set your burner on high and bring the ingredients to a boil.

  6. Savor the sweet-tart aroma of the honey and raspberries merging together into something glorious. Yes, this is an actual step. We all know Anne would do the same thing if she were making it! 😉

  7. As soon as it starts to boil, turn the burner on low and let your jam-to-be simmer for 1 hour and 20 minutes (or until it’s reduced to 2 cups).
  8. Turn off the heat and let the jam cool completely. Transfer to an airtight container. Pop it in the fridge while you finish the ice cream.
  9. Set up your ice cream maker and turn it on. Pour the chilled cream mix into the ice cream maker and let it churn for 15 minutes, or until it looks like this:
  10. Transfer the ice cream to an airtight container and pour 1 cup of the jam in a circle in the center of the ice cream.
  11. Gently fold the jam into the ice cream for a few strokes–just enough to incorporate a raspberry swirl through the vanilla.
  12. Close the container and freeze for 4 hours or until ready to serve. If you like, drizzle a little extra jam over the top just before serving.
